Ciavolich Cabernet Sauvignon Donna Ernestina is a beautiful food-friendly red wine from Italy's Abruzzo region. The name of the winery is Ciavolich Azienda Agricola. The Ciavolichs were Bulgarian wool merchants who, in 1500, arrived in Miglianico, where, in 1853, the family constructed their first wine cellar, which is one of the most ancient winemaking buildings in Abruzzo. Today the family winery is owned and run by Chiara Ciavolich and her husband Gianluca. We met Chiara at our shop in October 2016 and immediately fell in love with her wines!
Within a category normally dedicated to large, industrial production, Ciavolich produces a mere 3500 cases from the very best fruit grown on their prime, coastal vineyards, with the remaining fruit sold off. Entirely hand-harvested, the wines of Ciavolich reflect the time honored, traditional winemaking techniques of Abruzzo. Donna Ernestina Cab is 100% Cabernet Sauvignon. The grapes come from a 1-hectare vineyard in Pianella, planted in 2000. Aging is in stainless steel vats and in 2007 barriques for about 12 months. Intense ruby red in color. Elegant vegetal scents typical of the grape. Approximately 3,000 bottles are produced.
