Justin Cabernet Sauvignon is a beautifully rich Cab from the Paso Robles region of California. Justin planted their first vineyard back in 1981 with a mission to make world-class Bordeaux-style blends. Rich in fossilized limestone from eons of marine deposits, Justin's soil is ideally suited to creating big, Bordeaux-style reds. The limestone "stresses" the vines, producing grapes that fully express their varietal character. Paso Robles' distinctive microclimate offers the widest day-night temperature swings of any grape-growing region in California. The hot days allow the grapes to develop intense flavor, while the cool nights create great structure and balance.
Justin is celebrating 30 years of crafting this beautiful wine. Grapes are hand-picked and sorted by the berry for consistent quality and flavor. Justin Cabernet Sauvignon then spends 13 months in traditional small American oak barrels (25% new) to impart depth and complexity, highlighting the influence that the limestone rich soils and unique climate of Paso Robles add to the classic Cabernet character of this exceptional wine. It is aromatic with ripe black and red cherry, black currant and berry fruit, baking spice and sweet tobacco with red and black licorice, oak, cocoa and subtle camphor notes. The finish is fresh and moderately long, showing lingering cherry and berry notes with oak and barrel spice nicely supported by fine, balanced tannins.
